I've always wanted to make sure I fed my family good, wholesome food, but let's face it. It's time-consuming. How do you raise a family, work a full-time job and still have time to do ALL the things? So when my children were still at home, I did the best I could, but I admit, convenience trumped everything. 

When my husband turned 50, he had a "heart episode" that landed him the ER for a couple of days, and I vowed to make sure he ate better. Shortly after that, I found a loaf of bread that had been forgotten in our camp trailer. It was almost 6 months old and it was still soft and white. Really? What the heck do they put in bread that could make it last for 6 months? So I started making my own bread and I loved knowing I was providing a healthier option for my family. 

In 2021 I was diagnosed with polycythemia (NOT polycythemia vera) and discovered some essential oils that brought my blood numbers under control.  As a precaution, my hematologist had me do genetic testing and I discovered that I have a Pole-9 mutation that puts me at a higher risk for colon cancer. What else increases your risk for colon cancer? Eating lots of highly processed foods, especially seed oils. So we stopped buying anything that contained seed oils (which, fyi, is almost everything!) and I started making more things from scratch. 

I now make almost everything from scratch. There are no boxed or prepackaged foods in my home. Then a friend of mine introduced me to Sue Becker's podcast, Sue's Healthy Minutes, and my life was completely changed! I found a grain mill on Facebook Marketplace and I haven't looked back. 

​What do I mean by real food? 

Not all processed food is bad. Processed food is any food that has been altered from its original form. Cooking, freezing and canning are all methods we use to process our food so that it tastes better, lasts longer and is more convenient. Did you know that more than 70% of our food is ULTRA processed? Meaning that the food is made with things that you would not normally find in your typical home kitchen, such as emulsifiers, preservatives and artificial ingredients. 

Ultra processed food can lead to higher rates of cancer, fatty liver, cardiovascular disease, diabetes, and obesity. For the last several years, my family has made a commitment to cut out all ultra processed foots from our diet. I make everything from scratch, including milling my own bread. Snacks for the grandkids are homemade: potato chips, crackers and fruit snacks. I also make things in bulk for freezing: Hashbrowns, meatballs, lasagna, enchiladas and more. I make my own condiments (mayo, ect) and seasonings.

I strive to get the most out of all my food. Bones and excess fat cut off before cooking are used for broth and tallow. If a loaf of bread is on the verge of going stale before I can use it up (which rarely happens!) I turn it into croutons or breadcrumbs. Fruits and vegetables that aren't going to be used in time are dehydrated to be used in soups, stews and seasonings. I even dehydrate sour cream and broth to save on freezer space.

Years ago, my daughter (an RN) tried to convince my husband and I that essential oils were the solution to all our aches and pains. We laughed at her and for years, referred to her as our "hippie child".
